One of the tasks as a #MorrisonsMum, other than check out the bargains was to create a meal for the family and cost it. I decided on chicken, with the chicken breast on offer and the thighs for a great price, I then had to decide what to make. We spent the whole day in the garden with a mini picnic, so I wanted something simple and this is it.
The chicken was mixed with red onions, chilli, lemon,thyme and oregano, the baby new potatoes were sliced thickly, a coating of oil and garlic cloves and fresh rosemary from the gardenwedged in and all baked in the oven for 45 minutes. I even lined the trays with foil so no washing up!!
Served with fresh green beans, it was a light, flavoursome meal perfect after a tiring day picnicking!
Ingredients
For the chicken traybake.
2 red onions sliced into rings and then halved.
Chicken breasts and or thighs, skinned.
1 or 2 galic cloves crushed
1 or 2 galic cloves crushed
1 fresh red chilli
1 tsp thyme
1 tsp oregano
Salt and black pepper to taste.
Lemon juice, fresh or bottle.
Olive oil to drizzle
For the herb roasted potatoes
1 bag of new potatoes washed and cut into thick slices.
1 whole head of garlic
A handful of fresh rosemary sprigs
Olive oil to drizzle.
Place the chicken in a large bowl, add all the ingredients apart from the onions, mix thoroughly.
Add the chicken to a large tray, lined with foil, (saves washing up) drizzle with olive oil.
Layer the potatoes, in a foil lined tray, pushing in cloves of garlic and rosemary, drizzle liberally with oil.
Bake in a hot oven Fan 180, 200C gas mark 6 for 45 minutes.
Check the potatoes and chicken according to your own ovens, when potatoes are golden and chicken is cooked and juices run clear.
Serve with green veg or salad.

ReplyDeleteI haven't made a chicken traybake, and really like the sound of this. A really good addition I include with every chicken or pasta meal is Knorr's Aromat. It really adds lovely flavour - I'm going to try this traybake over the summer holidays :-)
