Chicken and Okra Curry

I have been cooking with the new Knorr Flavour Pots and really enjoying the ease and the taste.

I used the Knorr Curry Flavour Pot for this Chicken and Okra curry dish. It was so successful with the family I have gone on to make it three times, adding different ingredients potatoes to bulk out and combining the other Flavour Pots to create a different taste. The Chill pot gives a real spicy kick if you like your curry hot, but for the first recipe, I just used the curry pot. Its a lovely flavoursome curry taste, quite mild.

One great benefit with the pot as opposed to curry powders is that there is no need to fry as much, powder and spices need to cook to let the flavour out, with the Flavour Pot its already to go.

I had never tried Okra before, it was in the box of ingredients Knorr sent me to try out. We all loved it and have had a few times now.

I added a little oil to the pan to cook the chicken as I was making a fast dish and did not want it to stick.

The curry method is fast, very easy and is on the table in 20 minutes, unless of course you are a food blogger then it will be photographed first looking for the best light, angle and it will be on the table a while later after several moans to hurry up!!

1/2 tablespoon of vegetable oil
450g chicken breast cut into small sized chunks
175g okra ends removed
1 onion sliced
4 fresh tomatoes
1 Knorr Garlic Flavour Pot
1 Knorr Curry Flavour pot
100-150 ml cold water

Heat a little oil in a saute pan or large frying pan that has a lid.
Add the curry and garlic potwith the chicken and mix around on a medium heat until the oil is flavoured and the chicken is sealed.
Add the onion and stir to cover with the flavours about 3 minutes.

Add the okra and stir in.

Then add the tomatoes do not stir in, just add a lid and this mixture needs to be left on a low heat covered for about 2-3 minutes.

Add a small amount of water, stir and bring to the boil, add the lid and simmer for 5-10 minutes. Check the chicken and if cooked serve.

See the Kale Foogath recipe which makes a nice spicy accompaniment.

Kale Foogath

As part of my Knorr Flavour Pot challenge I decided to use the chilli and garlic in place of fresh to make this spicy vegetable side dish.

Its so easy to make and is lovely to impress guest with if you are having a curry night!

I make a dish using green beans or cabbage called Foogath. I googled it as I have been cooking it for years with no real idea of what 'Foogath' means, and I am none the wiser, its a spicy dish using green vegetables so the kale Knorr kindly sent would hopefully work. the fresh coconut adds a lovely flavour but is entirely optional. feel free to try with any green vegetable.

Large bag of kale
1 tbsp of sunflower oil
1 large onion, peeled, halved and sliced
Grated coconut (optional)
1 Knorr Garlic  Flavour pot
1 knorr Chilli Flavour Pot
450 g cooked shredded kale
2 tsp garam masala
1 tsp ground cumin#
1 tsp salt

Melt the oil in a pan. Add the onion, garlic and chilli. Cook for 8-10 min until golden brown.
Stir the kale into the pan with the coconut (if using) garam masala, cumin and salt. Cook over a gentle heat for 5 min, until piping hot.

It goes well with the  Okra and Chicken Curry recipe here.

Knorr Flavour Pots Review

Knorr have recently launched the new Flavour Pot range and invited me to try them out. The new pots have been developed by Cameron Healy, one of the team of professional chefs that work with Knorr, they are a blend of herbs and spices in a drop of oil in each pot. There is a curry, a chilli, a garlic, a mixed herb and a peppercorn pot.

Knorr sent me some ingredients along with the Flavour pots and invited me to a challenge, to cook using the pots and so like the Masterchef Invention test, I got my thinking cap on and started to plan.

The Flavour pots can be used in hot and cold dishes, so soups, casseroles, curries, salads etc, they can also be used as a marinade.

My eyes rested on the curry pot first as you know my fondness for spice. I decided I wanted to make a curry using the okra, which I have never tried and decided to go with a fast stove top chicken dish.

To complement the curry, I used the kale and coconut to whip up a vegetable spicy side dish.

I have also used the mixed herb pot and a garlic pot in place of dried herbs  and cloved garlic to make my usual spaghetti bolognese and it gave a real fresh and more punchy taste.

What I love about the Flavour pots are the ease of use, no fiddly chopping, no garlicky fingers and I also loved playing with the combinations, using a chilli pot with the curry pot gives a fab extra kick for those who like a bit more fire.

Check out the recipes below.

Weight Watchers Iced Desserts Giveaway

Spring is here, the weather has been remarkable, dare I say summery of late. It has lifted my spirits and made me want to BBQ, eat salad and the sound of the ice cream van tinkling along the street means summer may be here soon.

For those who are watching their weight, it can be a time when ice creams and cold desserts are a complete no.

Fortunately Weight Watchers have launched some fab desserts options that mean you don't have to miss out. With six varieties to choose from you will find something to eat on a summers day and not be pining if others are tucking into Mr Whippy's!

There are the delicious Mini Sticks With a ProPoints value of 3 per stick. My favourite of the range.

Covered with silky milk chocolate or rich white chocolate, the sticks are ideal for fulfilling your sweet tooth cravings, without having to then jog the kids home from school to make up for it. I love the white chocolate variety, the ice cream is creamy and just the right sweetness, the white chocolate has a good taste.

At under 100 calories these are great for anyone trying to keep trim, I would have eaten these whilst on Slimming world as they are 5 syns.

Available from Tesco and Sainsbury’s – RRP £2.99

Anybody who loves a Cornetto and feels they are off the menu, again will not have to go without this year. Weight Watchers have a lovely range of both Chocolate and Vanilla or Toffee and Vanilla. I sadly could not find the toffee, but can guarantee the Choc version, the wafer is light, crisp and sweet, the ice cream again very creamy. The chocolate sauce is yummy and I will be buying these as everybody loved them. Its a full sized cone too , yet still only 148 Calories and a ProPoints value of 4 per cone. Another great price of £1.79 for four.

For those wanting a nice dessert, I suggest the Weight Watchers Toffee and Honeycomb sundaes. lovely creamy ice cream, swirls of sweet sticky toffee and a gorgeous crunch of honeycomb. The size is good and its hard to believe this is a dessert for dieters. only 119 calories and a ProPoints value of 3 and cost £1.59 per pack making them perfect to share. Only 119 calories mean you can feel sinful without any sin!
Available from Asda, Morrisons and Sainsbury’s.

Another sweet dessert, are the Weight Watchers Swirl Mini Pots, the perfect midweek mini treat for completing the cleaning, ironing, or even for emptying the dishwasher.
The flavours are crunchy creamy Chocolate Honeycomb and Toffee or scrumptious Strawberry and Raspberry flavours. I love the lightness of the raspberry pot. Its like one of those little icecream pots you get at the theatre, only there is no mortgage to take out for this one. A pack of four costs £2.10 only available at Morrisons.
The Strawberry Swirl Mini Pot is 84 Calories and a ProPoints value of 2 per 100ml pot.
Raspberry Swirl Mini Pot has only 88 calories and a ProPoints value of 2 per 100ml pot.

If you fancy trying one, Weight watchers have a voucher for 10 of my readers.

Win a years supply of Duracell Batteries

This is a very inspiring video. Duracell asked me to share it with my readers and have also offered a really handy prize, a years worth of Duracell batteries* for a reader to power their children's toys!!

Watch how Luke and Jamie, 2 Boys in a Boat, rowed 3000 miles across the Atlantic Ocean in aid of Breast Cancer Care. In this inspiring feat of mental and physical endurance, the boys show an extraordinary commitment to never giving up – despite meeting sharks, crossing 40ft waves, and narrowly avoiding being crushed by a container ship during their 54-day adventure.

Luke and Jamie, both only 21, earned a place in the Guinness Book of World Records in the process. The Duracell Bunny also joined the boys on this epic journey; tied to the mast and hanging on for dear life.

Duracell, the world’s #1 longest lasting battery, sponsored the boys on their epic voyage across the Atlantic. Duracell: The power to go further.

To win answer the question, please add the answer in the Rafflecopter but let me know in comments you have entered and it would be nice to hear your thoughts on the boys amazing feat too, I am amazed they did this personally!
